Healthy Banana Protein Pancakes

These easy pancakes taste great, are gluten free, and can give you a nice little protein boost in the morning!

Equipment

  • Blender
  • 12 inch skillet (A griddle is ideal if you have one)

Ingredients
  

  • 3 cup Whole Oats
  • 1 tsp Cinnamon
  • 4 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • .5 tsp Salt
  • 1 cup Milk
  • 3 Eggs
  • 4-5 Bananas
  • .75 cup Flavorless Whey Powder (Optional)
  • 2 tbsp Olive Oil

Instructions
 

  • Put dry ingredients into a blender and pulse for 10-15 seconds.

  • Add wet ingredients and blend for 30 seconds
  • Put half a tablespoon of olive oil in a 12 in skillet (or griddle) over medium heat (about 350F). Use a paper towel to spread the oil evenly around the pan. As you cook you can add more oil as needed
  • Pour four inch circles and wait for bubbles to form on pancake surface.
  • Flip and cook until edges are dry.
  • Enjoy with whatever toppings you wish!
